Coconut

Yes it is a fruit, even though we thought it was a nut! It is from the drupe family. It takes up to a year for coconuts to mature, the trees bloom as many as thirteen times a year. It is constantly forming new fruit, so there is always coconuts ready to pick. Coconut palms grow in sandy soil, humid climates, and places with alot of sun and rain. They are often found near the ocean. The light, fibrous husk allows it to drift easily on the ocean to other areas, where it would begin to grow. Coconuts have so many uses for its water, meat, sugar, and oil. Its very rich in fiber, vitamins and minerals. The seed fiber called coir is used to make rope, brushes, mats, and fishnets. We can’t think of a more useful fruit, can you? Coconut oil is even used in some soaps and cosmetics.

When choosing a coconut put one up to your ear you should hear a bit of liquid slushing around. If not that means it has dried up. Put it back and test another. We have even had coconut water served in a restaurant straight from the coconut, they made a whole and put the straw inside. So unusual and tasty.

    Hello, I loved your presentation at the Sonoma Marin Fair.
    I would also love your recipe for Asian Vegetable Spring Rolls with Almond Coconut sauce. I was so inspired by you, on my way home from the fair, I bought the ingredients and made these for dinner that night. By the way, I went to the fair just to see you! I’m a big fan of yours.
