Kids and Leafy Greens

Nutrient packed dark leafy greens can be a parents dream food for their child. We have probably all heard of kale chips by now, which happen to be incredibly tasty. Unfortunately kids and leafy greens are not always symbiotic. We can resort to tricks and bribes but could the real solution be in preparation and presentation of this super food? Just maybe if we approached green veggies from a different angle when serving them to our kids we would have a better outcome. Thinking out of the box like sprinkling crumbled kale chips on top of their mac and cheese as a garnish to start. If it goes well move on to adding some to their favorite pasta sauce and then advancing to a recipe like kale pesto. Considering the current trend of kid foodies it is not so far fetched that we can incorperate leafy greens into kids diets. Parents have been introducing a variety of vegetables into their childrens diets at a much younger age. Some tasty varieties like spinach, kale, swiss chard, chicory, mustard greens, and arugula are a good place to start. Remember to always serve them a kid size portion, a large pile of steamed greens in the middle of the plate will scare them off every time!

 

There are a few tips that can help when introducing leafy greens:
Make sure they are fresh, taking the kids to a local farmers market to buy them is a great idea.
Prepare them with some other strong flavors that your kids enjoy, olive oil, squeeze of lemon, dried fruit, or a touch of brown sugar or honey.
Serve kid size portions and incorporate it into other food they already enjoy!
Having your children grow their own leafy greens can be just the ticket to trying them. There is something magical that inspires kids when they pick veggies in their own back yard.
