Spring Radishes

Radishes are easy to grow and mature very quickly. Sometimes it is hard to wait and watch your veggies grow! Radishes don’t keep you waiting as long as some other tasty vegetables. The small red spring radishes are ready to eat in only about 3 to 4 weeks. They are a cool weather crop and the seeds are usually planted directly in the ground.

We couldn’t believe radishes are in the mustard family! They come in many colors, pink, rose, red, purple, white and yellow. Radishes need moist soil, never let them dry out. In fact the dryer the soil the more spicy the flavor of the radish. When you are buying radishes look for the bunches that still have their leaves attached. You can even use the greens in salads or saute’ them with some olive oil and garlic.

Spring radishes have a more mild flavor than the summer crops. That makes spring a perfect time for kids to try this amazing little jewel of a veggie. Our Grandpa Bill could grow anything and introduced radishes to us for the first time. We wanted to share an easy, special little sandwich idea with you. Take your favorite bread, spread creamy butter and layer spring radishes sliced thin and create one of the freshest tastes ever. These sandwiches are great in your lunch box, after school snack, or make a plateful cut into small sections for Easter brunch!
