Walnuts
We have a very gnarled, greatly slanted walnut tree in our back yard. We climb it, read in it and have even tied a chair in it to sit in. What we haven’t always noticed is how incredibly tasty the walnuts are, our jack russell terrier named Jack usually beats us to them.
Seriously, we cook with walnut oil, add the nuts to baked goods and dip our caramel apples in them. Walnuts are the oldest known tree food, we can’t even imagine how old that is, can you? Walnuts are harvested once a year between September and November. A walnut tree grows very slowly and it takes about 15 years for one to produce its first crop of walnuts. Walnuts taste best when you buy fresh and in the shell, remember to refrigerate after
cracking them to help them stay fresh longer.
Toasting them a bit before using them in recipes can bring out their rich nutty flavor. We use walnut oil in salad dressings and tossed with roasted vegetables. The walnut has endless possibilities for snacking and cooking!
