Lemon Tea Cookies
Lemons are in season and they are one of our favorite ingredients to cook with. These Lemon Tea Cookies are so lemony and melt in your mouth and this recipe is from our new cookbook We Heart Cooking!
3/4 cup unsalted butter, at room temperature
1 cup granulated sugar
1 large egg
1 tablespoon grated lemon zest
1/4 cup lemon juice
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 cup powdered sugar, plus more for dusting
1 tablespoon lemon juice
Preheat oven to 375 degrees. Place butter in a large bowl. Beat with a mixer at high speed for 30 seconds or until fluffy. Add sugar, egg, lemon zest, and lemon juice. Beat until combined, scraping down sides of bowl if necessary.
Sift together flour and baking soda in a bowl. Add flour mixture to butter mixture and beat on low speed for 2 minutes or just until combined. Do not overmix.
Using palms of your hands, roll dough into 1 inch balls, placing them 2 inches apart on ungreased baking sheets. Bake for 10 minutes or until edges are golden brown.
While cookies are baking, mix powdered sugar and lemon juice in a small bowl until smooth, set aside. When cookies are done. Let cool for 2 minutes on pans. Remove from pans and place on wire racks. While cookies are still warm, brush glaze over tops using a pastry brush, then dust with powdered sugar. Let cookies cool completely, then serve. Makes 30 cookies.
