Topping Mania
Toppings aren’t just for ice cream sundaes, they are for topping your favorite veggies. We love hard boiled eggs, almonds and asparagus so we thought why not try them all together. Many people are growing vegetables in their own back yard, a couple of the most popular are squash and zucchini. Hopefully you get a great crop but how many nights in a row can you eat the same old zuchini prepared the same way. If your like us not very many, you need a list of quick and easy ways to change it up.
One of the simplest ways to pack a lot of extra flavor on top of your vegetables is by tossing them with olive oil and chopped fresh herbs. One of our favorite ways to prepare vegetables is roasted in the oven, we like to add peeled garlic cloves along side, they become very soft and have a sweet flavor from the slow roasting. Another good example is just by adding a squeeze of lemon or some lemon zest on top of your steamed broccoli it gives it a tangy fresh flavor. One of our favorite chef friends introduced us to walnut oil last summer and we have been drizzling it on our veggies ever since. Walnut oil adds a nutty, smokey flavor we love, and so do our grown up friends.

Directions
For the oils just drizzle a bit over the prepared vegetables, or sqeeze the fresh lemon juice over them. If you are using the fresh herbs, chop them fine and toss them with your vegetables. Chop the nuts and seeds into small pieces and sprinkle on top. There are endless ways to eat your vegetables. We wonder how many different combinations can be made with these toppings.
