Elizabeth Eckholt

We have a new friend and mentor named Elizabeth Eckholt. She is teaching us about so many different things like: composting, vegetable gardening, healing foods, healthy organic products, and environmentally sustainable approaches to everyday living. Elizabeth inspires us because of her work to teach people about healthier living.

Elizabeth Eckholt, founder of VedaGreen, is a member of Marin Organics, Board member of Slow Food Marin County, Ca and member of Slow Food, Salt Lake City, Utah. One of her green weddings was recently featured in Martha Stewart Weddings magazine.

VedaGreen delivers elegant, exceptional green events that reflect her clients’ environmental and social awareness. VedaGreen is committed to supporting local farmers and growers, using truly sustainable resources, and being a zero landfill impact event organizer. In conjunction with Green Consultants, they provide green event services for corporate events, weddings, personal celebrations, and event destinations.

Elizabeth has also created a healthy school lunch program that we are very interested in learning more about. Visit the Veda Green website for more information and visit one of Elizabeth’s green weddings in Martha Stewart Wedding magazine.
