Citrus Smoked Salmon with Crostini

Salmon is one of our favorite things to eat, especially lox and bagels. For this recipe we use smoked salmon. It’s perfect to serve this as an appetizer or hors d’oeuvre when family and friends drop by — very elegant and very festive! This recipe requires a grown-up helper! Serves 4

Ingredients

½ lb. sliced smoked salmon
2 mandarins
½ teaspoon sea salt
½ teaspoon cracked pepper
2 tablespoons chopped shallot
2 tablespoons chopped fresh tarragon
2 tablespoons chopped fresh chives
¼ cup pomegranate seeds
4 tablespoons olive oil
½ loaf French bread baguette, ¼ inch slices

Directions:

Put oven rack in upper third of the oven and preheat to 350 degrees. Place the slices of smoked salmon on a medium sized platter in a decorative manner. Cut one of the mandarins in half and squeeze the juice over the top of the salmon. Sprinkle the salmon with salt and pepper, set aside. Put 2 tablespoons of the olive oil in a small bowl. Place the sliced French bread on a baking sheet and brush the top of each slice with the olive oil. Place the bread in the oven for about 10 minutes or until golden. Chop the shallot, tarragon and chives; set aside. Slice the other mandarin in thin slices and set aside. Drizzle the remaining 2 tablespoons of olive oil over the top of the salmon. Evenly sprinkle the salmon with the shallot, tarragon, chives and pomegranate seeds. Garnish the salmon with the slices of mandarin around the edges of the platter and serve with the crostini.
