Salad First
Salad, especially for kids should be a starter course. When kids are at their most hungry is the best time to introduce veggies and greens. For kids salad can be finger food, they love using the dressing as dipping sauce. A variety of seasonal blanched and fresh crispy vegetables on top of all of those tasty greens can be just the ticket you are looking for to spark a kids love for salad. Audrey and Lilly love all kinds of vegetables and I believe one of the reasons is that we always took trips to the farmers market and the grocery store. I let them pick out new or unusual veggies and we would come home and I would prepare them immediatley. Most of the time they loved it, if not you try again a few weeks later. One of the girls favorite dressings is Balsamic vinegar and extra vergin olive oil, try new dressings often so they like a variety of choices. They are hoping to start a new trend for school lunches beginning with salad. Remember lead by example, eat your salad first!

Grated cauliflower
Grated carrots
Blanched veggies like asparagus and green beans
Yellow, red, and orange bell pepper
Vine ripe tomatoes
Red onion
Sweat peas
Cucumber
Avocado
Nuts and seeds
Cheeses
Croutons (homemade tastes best)
