Summer = Pizza

One of the reasons our family loves summer so much is all the grilling we do. Pizza on the grill is a great option to involve the kids, from making the dough to placing their favorite toppings on. The taste of a thin stretched dough on the grill is only beaten by a wood fired pizza oven. Seeing as most of us don’t own one its time to get that pizza going on our grills at home. It makes for a great party for kids and adults to set up all of the different fresh seasonal toppings like, mushrooms, zucchini, tomatoes, even avocado. A combination of cooked and uncooked veggies are great, kids especially like some of the topping to be crisp. Toppings like bacon, roasted garlic, chicken or goat cheese are great twists to introduce kids to unfamiliar toppings on their pizzas. Let your imagination run away with you and think like a kid!

Basic steps for grilling pizza are don’t have the grill too hot, do a test with a small piece of dough first. Brush one side of dough with olive oil to keep it from sticking. Flip the dough when their are grill marks and is golden brown about 3 to 5 minutes. brush more oil on top, spread a small amount of sauce if desired and add the toppings, cook for an additional 2 minutes. Remember to use pregrilled or precooked toppings. Gently lift and slide pizza with a spatula onto a cutting board. Cut into slices and serve.

One of our favorite summer toppings is once you remove the pizza from the grill top it with fresh arugala and mixed greens. Use your favorite dough recipe or even better if your Italian use your grandmothers secret recipe.
